Omelette with Parmesan Cheese and Chives Prep time: 2 - 3 min. Cook time: 3 min. Serves: 1 Ingredients:2 Large eggs Salt and freshly ground black pepper 1 Tsp. of chives 2 Tbs. finely grated cheese, e.g. Parmesan 1 Tbs. butter Directions:1. Beat the eggs and seasonings lightly together in a small bowl until the yolks and whites are broken into each other. 2. Melt the butter in the frypan until hot, but not brown. 3. Pour the mixture into the pan, spreading evenly over the base. Use the back of a fork in a circular movement to gently move the eggs from the sides to the middle of the pan. Tilt the pan so the runny egg at the middle flows to the side. Cook for about 30 seconds. Turn off the heat because there will be sufficient retained heat to complete cooking. 4. Scatter the cheese and chives over the surface and immediately slide a spatula under the side of the omelette nearest to the handle. Tipping the pan away from you, roll the omelette out of the pan onto a warmed serving plate. Other fillings: Finely chopped ham. Chopped mushrooms. Sweet - add 2 tsp of sugar to mixture, then fill with fruit preserves or jam.
